Ingredients:
– 2 cups cooked chicken breast, shredded
– 1 cup cooked rice
– 1 cup corn kernels (fresh or frozen)
– 1 cup black beans, drained and rinsed
– 1 cup shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1 cup sour cream
– 1 cup chicken broth
– 1 medium onion, finely chopped
– 3 cloves garlic, minced
– 2 jalapeños, seeded and finely chopped
– 1 can (10 oz) diced tomatoes with green chilies
– 1 tsp ground cumin
– 1 tsp chili powder
– Salt and pepper to taste
– 2 tbsp olive oil
– Fresh cilantro for garnish (optional)

Just put everything inside the bread and take it to the oven!

Instructions:
1. Prepare the ingredients: Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and chopped jalapeños, cooking for another 2 minutes until fragrant.

2. Add the chicken and spices: Add the shredded chicken, cumin, chili powder, and salt and pepper to the skillet. Stir well to combine and let the mixture cook for 3-4 minutes to allow the flavors to meld.

3. Combine with other ingredients: In a large mixing bowl, combine the cooked rice, corn, black beans, diced tomatoes with green chilies, sour cream, and chicken broth. Add the chicken mixture from the skillet and mix everything together until well combined.

4. Layer the casserole: In a greased 9×13 inch baking dish, spread half of the chicken and rice mixture evenly. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the top. Add the remaining chicken and rice mixture and finish with the rest of the cheese on top.

5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

6. Garnish and serve: Let the casserole cool for a few minutes before serving. Garnish with fresh cilantro if desired.

This Garlic Jalapeño Chicken Casserole not only brings incredible flavors to your table but also provides a comforting and satisfying meal for any occasion. Enjoy!
