Ingredients
– 1 cup pearl barley
– 2 tablespoons olive oil
– 1 tablespoon butter

– 3 cloves garlic, minced
– 2 cups mixed mushrooms, sliced (such as cremini, shiitake, and oyster)
– 1/2 cup dry white wine
– 4 cups vegetable or chicken broth, warmed
– 1/2 cup grated Parmesan cheese
– 1/4 cup fresh parsley, finely chopped
– 1 tablespoon fresh thyme, chopped
– 1 tablespoon fresh rosemary, chopped
– Salt and pepper, to taste
– Lemon zest, for garnish (optional)

Instructions
1. Rinse the barley under cold water and set aside.
2. In a large skillet or saucepan, heat the olive oil and butter over medium heat.
3. Add the chopped onion and cook until it becomes translucent, about 5 minutes.
4. Add the minced garlic and cook for another minute, ensuring it doesn’t burn.
5. Add the sliced mushrooms to the pan, stirring occasionally, until they release their moisture and begin to brown, about 5-7 minutes.
6. Pour in the barley and stir to coat it with the oil, butter, and vegetables.
7. Add the white wine and cook until it’s mostly absorbed, about 2-3 minutes.
8. Begin adding the warm broth, one ladleful at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more. Continue this process until the barley is tender and creamy, about 35-40 minutes.
9. Remove the pan from heat and stir in the grated Parmesan cheese, fresh parsley, thyme, and rosemary. Season with salt and pepper to taste.
10. Garnish with lemon zest and additional Parmesan cheese if desired.
11. Serve immediately, enjoying the rich flavors and creamy texture of this delightful dish.
