Stuffed Zucchini Boats: A Delectable and Healthy Mediterranean Delight

Stuffed Zucchini Boats are a perfect fusion of nutritious and flavorful ingredients, making them a fantastic option for a light dinner or a satisfying side dish. These zucchini boats are hollowed out and filled with a savory mixture of ground meat, vegetables, herbs, and spices, then baked to perfection. The result is a scrumptious medley of textures and tastes that are sure to delight your palate.

Ingredients:

  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 pound ground beef or turkey
  • 1/2 cup diced tomatoes
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Wash the zucchinis and cut them in half lengthwise. Use a spoon to scoop out the flesh, leaving about 1/4 inch of zucchini on the skin to form the boat. Chop the scooped-out flesh and set it aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.
  4. Add the garlic to the skillet and cook for another 1-2 minutes, until fragrant.
  5. Add the ground beef or turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  6. Stir in the diced tomatoes, chopped zucchini flesh, feta cheese, Parmesan cheese, parsley, oregano, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.
  7. Optional: Stir in the breadcrumbs to the mixture for added texture.
  8. Place the zucchini boats in a baking dish and fill each one with the meat and vegetable mixture.
  9. Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the filling is golden brown on top.
  10. Remove from the oven and let cool for a few minutes before serving.

Enjoy your delightful stuffed zucchini boats with a side of your choice, such as a fresh green salad or a serving of quinoa.
